This recipe is an old favorite at our house.  It is one I forget all about in my frenzy to always be trying something  new and different and then I make it and it is like visiting an old “friend.”  It is such an uncomplicated easy recipe that makes a huge pan and the leftovers just get better and better.  Make, eat and enjoy!

1 pound lean ground beef

1 green pepper, chopped into chunks

1 cup mushrooms, sliced

2 jars (24 ounces each) of your favorite Spaghetti sauce

1 package (16 ounces) spaghetti cooked, rinsed and drained

3/4 cup pepperoni slices

2 cups shredded cheese (I like colby/jack)

Brown ground beef, greens peppers and mushrooms in pan.  If there is any grease after you are finished browning, drain.  Combine both jars of sauce with the browned beef mixture.  Let that simmer for a few minutes while you cook the spaghetti.   When the noodles are done mix the spaghetti and the meat sauce mixture together.

Place half of the spaghetti/meat sauce mixture in the bottom of a 9 x 13 casserole dish.  Lay out half of the pepperoni slices and top with 1 cup of the shredded cheese.  Place the remaining spaghetti/meat sauce mixture on top of this layer and repeat the pepperoni layer and then the remaining 1 cup of cheese.  Bake in a 350 degree oven for 25 to 30 minutes.  You want the cheese to melt and start to become golden brown.  Take it out of the oven and let it sit for at least 5 minutes to make serving easier.
